Ingredients
For the Chicken Marinade
- 700 grams of chicken
- 1 tablespoon red chili powder
- 1/2 teaspoon garam masala
- 1 teaspoon cumin seeds
- 1/2 teaspoon black pepper powder
- 1/2 teaspoon turmeric powder
- Salt to taste
- 1 tablespoon lemon juice (or vinegar)
For the Biryani
- 15 cloves of garlic
- 1 medium-sized piece of ginger
- 8 green chilies
- 4 onions
- Ghee and oil for frying
- 3 glasses of basmati rice
- 2 teaspoons ghee for cooking rice
- Whole spices: cardamom, cloves, bay leaf
- 1 tablespoon ginger-garlic-green chili paste
- 2 tomatoes
- 1/2 teaspoon turmeric powder
- 2 teaspoons garam masala
- Fresh coriander and mint leaves
- 2 tablespoons yogurt
- Fried onions, cashews, and raisins for garnishing
Preparation Steps
Step 1: Marinate the Chicken
- In a bowl, combine the chicken with red chili powder, garam masala, cumin seeds, black pepper powder, turmeric powder, salt, and lemon juice.
- Mix well and let it rest for about 30 minutes to allow the flavors to meld.
Step 2: Prepare the Spice Paste
- In a mixer, add garlic, ginger, and green chilies. Grind them into a fine paste.
Step 3: Fry the Onions
- Heat a mixture of ghee and oil in a pan.
- Add half of the sliced onions and fry them until they turn golden brown.
- Remove the fried onions and set them aside for garnishing.
Step 4: Fry the Chicken
- In the same oil, add the marinated chicken and fry until it is cooked through and slightly browned.
- Remove the chicken from the pan and set it aside.

- Add the washed and soaked rice (3 glasses) and fry for a few minutes.
- Pour in 3.5 glasses of water and add salt to taste.
- Cover the cooker and cook until one whistle, then reduce the heat and let it cook for another 5 minutes.
Step 6: Prepare the Biryani Masala
- In a separate pan, heat the oil used for frying the chicken.
- Add the remaining sliced onions and sauté until golden brown.
- Add the ginger-garlic-green chili paste and sauté until fragrant.
- Add chopped tomatoes and cook until they are soft.
- Stir in turmeric powder and garam masala, mixing well.
Step 7: Combine Chicken and Rice
- Once the rice is cooked, fluff it gently and set it aside.
- In the pan with the masala, add the fried chicken and mix well to coat the chicken with the spices.
- Add a little water if needed to keep the mixture moist.
Step 8: Layer the Biryani
- In a large pot, layer half of the rice at the bottom.
- Add the chicken masala on top of the rice.
- Layer the remaining rice on top of the chicken.
