Cut the nozzle hole to your desired size, typically around 15 mm, and fill the tube with the seasoned beef mince.

After three hours of smoking, check the internal temperature of the jerky sticks. They should reach 74°C (165°F). Remove them from the smoker and let them cool for about 10 minutes.
Once cooled, you can cut the jerky sticks into smaller pieces for easier storage. It’s recommended to store most of them in a container in the freezer, while keeping a small amount in the fridge for daily snacking. This way, you can enjoy your homemade Twiggy sticks fresh every day.
