Start by washing the basmati rice thoroughly. After washing, soak the rice in water for thirty minutes to ensure it cooks evenly and absorbs flavors.
Chop the large onion finely. In a pot, heat a little vegetable oil over medium heat. Add the cinnamon stick, bay leaves, cardamom pods, and cloves to the pot. Stir these spices for a minute to release their aromas, then add the chopped onion and sauté until it becomes translucent.
Once the onions are ready, add one tablespoon of grated garlic and stir until fragrant. Next, add the pieces of chicken to the pot. Season the chicken with one teaspoon each of cumin, coriander, black pepper, and paprika, along with half a teaspoon of turmeric.
Add one tablespoon of salt, two tablespoons of tomato paste, the diced tomatoes, and the whole hot and small bell peppers to the pot. Cover the chicken with hot water and let it cook over medium heat for thirty minutes.
After thirty minutes, carefully remove the chicken from the pot. Take a scoop of the broth into a small bowl. Add the soaked rice to the pot and cook over medium heat until the broth reduces. Once reduced, lower the heat and let the rice cook for an additional twenty-five minutes.
In the bowl with the broth, add one teaspoon of tomato paste and two tablespoons of vegetable oil. Mix well and coat the chicken pieces with this mixture. Season the chicken with a quarter teaspoon each of cinnamon, cardamom, cloves, cumin, chili flakes, paprika, and black pepper.
To achieve a beautiful golden color, brown the chicken under the oven broiler. Make sure to coat the chicken with the pan liquids to keep it moist during this process.
